How to do a manual backup on windows an restore on an ubuntu installation?

Hi
So I've setup my z-way with a uzb with license on a win 10 machine with the latest win release. I see a lot of problems and server often stops so I'm moving it to a new ubuntu VM. One of my problems is that I get a error message when trying to do a backup, so i need to do it manually. I only have the default addons pluss openhab addon.
So which filers and folders do I need to copy to transfer my current setup to a new installation?
