Even if you set the homekit-skip tag the unwanted device function(s) is still exported to HomeKit and visible in Home app.
Test with a Fibaro Door/Window sensor FGK-101.
Try to get rid of the Tamper switch.

Please remove the HomeKit app and set it up again. HomeKit was reworked a lot. You certainly still have the old app code in userModules folder.

The test environment is new, new RPi4B, new installation of Rpi OS, new z-way server 3.2.0 - no old data. New iPhone with different clean iCloud. And only ONE sensor from Fibaro.
I removed the HomeKit App as you suggested.
I removed the Bridge from the iPhone.
Reinstalled the Bridge and the name set in HomeKit App was NOT transfered.
The HomeKit skip tag still does not have any effect !!
