Help me with questions in building my z-wave using RaZberry

Hello forum,
Happy New Year!
I'm hoping this forum can answer some newbie questions on how best I can build my automation setup. In my case I'm looking to monitor some sensors (water detection and battery charger) for our boats in our boathouse. I have a Raspberry Pi 3 and would like to use it as our sensor hub. I'm hoping this community can see if my setup plan will work or not. Here is what I'm planning to do:
Use z-wave wireless sensors.
Use a Raspberry Pi 3 and RaZberry addon on to connect to the sensors.
Our boathouse has wifi internet so I'll be able to connect the Raspberry Pi 3 to the Internet.
Install OpenHAB on my home server.
Install OpenVPN on my Raspberry Pi.
Collect the data from the z-wave sensors and send this data in real time to my OpenHAB server.
My earlier investigation on this setup is to use MQTT (maybe a python script) to send this data to my OpenHAB server over VPN.
Does this setup sound like it will work? If not, where are the holes that need to be corrected?
Further questions for this setup:
Is there a way to keep my Raspberry Pi O/S from becoming corrupted? I'd love to be able to have my O/S in read only mode so no corruption can occur. Is this possible when collecting data and sending it to OpenHAB?
Any advice or pointers you can provide would be greatly appreciated.
